Rhubarb & Berry Compote

The sweet taste of summer

Rhubarb works wonderfully with berries – bringing out their sweetness and depth of flavour. Our juices are perfect in place of water when making compotes. The Cloudy Apple juice works well with apples and pears and Apple & Ginger is great with apricots and similar soft fruits.

    Ingredients

    • Mix of fresh berries
    • Cawston Press Apple & Rhubarb juice

    Method

    • Take a mix of your favourite berries – strawberries, raspberries, redcurrants etc and poach them in about a quarter of their weight with Cawston Press Apple & Rhubarb juice.
    • Let them simmer gently for a few minutes to bring out their sweetness
    • Serve warm or cold

    Delicious with muesli or yoghurt for breakfast or as a dessert with fresh cream.
